We eat tacos at my house A LOT! Hubby loves them. The Deuce loves them. And they are so easy for me to make. We always use ground turkey. I don’t think we’ve bought ground beef since…I don’t even know when. Bacon, sausage, ribs, and steaks–YES! But we use ground turkey or ground chicken for all ground meat dishes. Go figure.
We buy large 16″ thin pizza crusts in bulk from Sam’s Club because Hubby makes homemade pizzas on our Big Green Egg. If you’ve never heard of the Big Green Egg before, check it out! He makes a smoked pizza that will make you slap ya mama. Because we buy the crusts in bulk, we keep them in the freezer until we are ready to use. They defrost very quickly when taken out.
16″ thin pizza crust
packet of taco seasoning
1 cup water
fresh diced tomatoes
diced red onions
any other taco toppings you like
Preheat oven to 350 degrees. If you don’t have a large enough pan for 16″ crust, you can use two cooling racks side by side, or lay it directly on lowest oven rack.
Bake crust for 10 minutes or until golden brown. Thin crusts can bake quickly so keep an eye on it.
Brown ground turkey and drain off fat. Place back into skillet and add taco seasoning and water.
Carefully remove crust from oven when done and lay it on a surface that you can cut on, e.g., butcher’s block, large piece of cardboard, or an aluminum peel like this one:
Spread salsa on crust leaving an inch around the perimeter.
Cover salsa with red onions, then ground turkey, lettuce, cheese, tomatoes and any other toppings you like. Invite the kids to help. They’ll love it! Place dollops of sour cream sparingly. Top with taco sauce. Voila!
Cut with pizza cutter or knife into desired pieces. This makes a great cold leftover snack the next day.
