Crab Salad Recipe
In my area, we are fortunate to be able to get fresh crab meat in abundance. However, Hubby uses imitation crab for this dish because it’s perfect for rigging it. Yes, this is Hubby’s recipe and I made it for the first time this past weekend. We use flake style imitation crab meat from Sam’s Club. Because it has no flavor, we have to spice it up.
1.5 lbs fully cooked, ready-to-eat, flake style Imitation Crab Meat
2 jalapenos, ribbed and seeded
2 tbsp fresh basil, chopped
1 tbsp light mayonnaise
Zest and juice of 2 limes
Salt and pepper to taste
Chop larger pieces of crab meat in half, combine all ingredients. Place in refrigerator for 1 hour. Serve cold.

We don’t eat enough crab meat. We don’t have access to fresh crab meat, but we do love imitation crab. Will be trying this simple recipe, which I’m sure I’ll make often during Lent.

I used to always eat “crab” salad and used to crave it often. The fish they use usually has such a sweet taste. Now I will have to find some!

I grew up on the coast of NC and LOVE fresh crab meat. Nothing like it.

Something simple and light. Imitation crab meat is sometimes too sweet for me. I’d probably season the mess out of it. lol
I am OK with not even adding the mayo to it, just the lime zest, juice and other ingredients. The Sam’s Club brand of imitation crab meat is totally flavorless to me. Thanks Andrea!
