  1. We don’t eat enough crab meat. We don’t have access to fresh crab meat, but we do love imitation crab. Will be trying this simple recipe, which I’m sure I’ll make often during Lent.

  2. I used to always eat “crab” salad and used to crave it often. The fish they use usually has such a sweet taste. Now I will have to find some!

  3. I am so in love with Rita Dove’s poems! I have been looking for a good crab salad that used imitation crab. Living in Oklahoma, we don’t get fresh crab, or affordable crab very often.

  6. Hey Kim! This looks really good! While, I’ve definitely eaten it, I don’t think I’ve ever used imitation crab meat for anything before. This looks like a good (and quick) go to recipe for a party or get-together. I’ll have to try this the next time I’m asked to bring a dish. Thanks for sharing!

    1. I am OK with not even adding the mayo to it, just the lime zest, juice and other ingredients. The Sam’s Club brand of imitation crab meat is totally flavorless to me. Thanks Andrea!

  7. This looks good!! We would have to use imitation crab meat since we live in the middle of the county and can’t get stuff fresh!
    I do shop at Sam’s Club occasionally.
